Salmorejo Bliss: A spoonful of Southern Spain

  Salmorejo About Salmoreja Originating in the sun-drenched city of Córdoba in Andalusia, salmorejo is a classic Spanish cold soup made from a simple, magical combination of ripe tomatoes, day-old bread, premium extra virgin olive oil, and a hint of garlic. It is a rich, creamy purée.  Ripe tomatoes, stale bread, extra-virgin olive oil, garlic, and salt are the only basic ingredients needed to make salmorejo. It has a considerably thicker, creamier texture than gazpacho because it doesn't contain any water or vinegar. A rich, vivid orange-red paste is produced by blending the components until they are smooth. This dish has its roots in peasant food, created as a way to use leftover bread and locally grown tomatoes during hot summers. Because Córdoba experiences extremely high temperatures, salmorejo became popular as a cooling, nourishing food that could be prepared easily and eaten cold.
