Nyonya Laksa Lemak is a spicy noodle soup made with coconut that is thick, aromatic, and creamy. It is a Peranakan staple. Its soul is a complex spice paste known as "rempah", which is cooked in coconut milk to produce the trademark thick, fragrant, and slightly sweet soup known as "lemak".
Nyonya Laksa Lemak's soul is its complex spice paste (rempah), which includes dried chillies, lemongrass, galangal, turmeric, prawn paste and shallots. This paste is sautéed and boiled with coconut milk, yielding a delicious, aromatic, and somewhat spicy soup. Rice vermicelli or thick noodles are commonly used, with toppings such as prawns, fish cakes, cockles, tofu puffs, and hard-boiled eggs. Fresh herbs, such as Vietnamese coriander (daun kesum), and a squeeze of lime provide brightness and depth.
