Evolution of Thai Green Curry
The term "curry" translates to "kaeng," which essentially refers to soups and stews based on a spice paste. Thai curries, unlike Indian curries, are distinguished by their paste, which is made by grinding herbs, chillies, and spices together in a mortar and pestle.
Green curry is notable for its vibrant color. Green curry is said to have developed in central Thailand in the early twentieth century, particularly under the reigns of King Rama VI and Rama VII. This was a period of culinary innovation, as new foods and techniques made their way into Thai kitchens. The distinctive green color is derived from the usage of fresh green chillies, as well as herbs such as kaffir lime and lemongrass. Cooks began adding coconut milk, a characteristic of central and southern Thai cuisine, to turn the spicy paste into a creamy, aromatic sauce.
Curry's origins in Thailand can be traced back to Indian and Persian traders who introduced spices like cumin, coriander, and cardamom. Meanwhile, Chinese immigration introduced cooking skills like stir-frying and noodle integration, which progressively merged with Thai food culture. Green curry exemplifies this fusion: the mixture is similar to Indian masala but made with fresh local ingredients.
Coconut milk, which is abundant in central and southern Thailand, became a staple of Thai curries. Its creaminess balances the heat of the chilies, resulting in the rich, silky texture that green curry is known for today. Over time, Thai eggplants, bamboo shoots, and fresh basil were added to improve both taste and presentation.
Modern Evolution
Green curry has become not only a household staple but also a must-have on Thai restaurant menus around the world. While the traditional recipe is still popular, chefs have experimented with it by pairing it with seafood, using it as a soup base, and even combining it with pasta and pizza. Despite these changes, its essence remains: a blend of spicy, sweet, creamy, and fragrant flavors that reflect Thailand's culinary philosophy of harmony.
